Why taste cannot measure sodium
A food does not need to taste salty to contain meaningful sodium. Sodium serves purposes beyond flavor: manufacturers may use sodium-containing ingredients for baking, curing, preserving, thickening, or retaining moisture. Cereals, pastries, breads, sauces, and other mild-tasting foods can therefore contribute sodium without producing an obviously salty taste. Foods eaten repeatedly, such as bread or tortillas, can also add up across the day even when each serving seems moderate. The total sodium on the Nutrition Facts panel includes sodium from salt and other sodium-containing ingredients. FDA guidance specifically warns that taste alone is not an accurate measure.
The blood-pressure connection is partly about fluid. Sodium attracts water, so a high-sodium eating pattern can increase the volume of blood moving through your blood vessels and raise blood pressure. Responses differ among people, but controlled research has found that reducing dietary sodium lowers blood pressure, including when combined with the DASH eating pattern. You also cannot judge blood pressure by symptoms. High blood pressure commonly produces no warning signs, yet persistent elevation can damage the heart, brain, kidneys, blood vessels, and eyes. What your blood-pressure numbers mean
A blood-pressure reading contains two numbers measured in millimeters of mercury, or mm Hg. The upper number is systolic pressure—the pressure against artery walls when your heart beats. The lower number is diastolic pressure—the pressure while your heart rests between beats. Either number can place a reading in a higher category.
Current ACC/AHA categories define normal blood pressure as systolic below 120 and diastolic below 80. Elevated blood pressure is systolic 120–129 with diastolic below 80. Stage 1 hypertension is systolic 130–139 or diastolic 80–89. Stage 2 is systolic 140 or higher or diastolic 90 or higher. A category describes the reading; it does not let you diagnose yourself from one result. Blood pressure changes during the day, and technique, activity, caffeine, stress, and other factors can affect an individual measurement. CDC describes hypertension as blood pressure that is consistently at or above 130/80 mm Hg, and AHA states that only a medical professional can confirm the diagnosis. A properly collected series gives your clinician more useful information than one isolated number. Your personal treatment target may also differ from the category boundaries, so use the chart to understand readings—not to start, stop, or change medication.

Begin with serving size. The sodium amount and percent Daily Value usually apply to one labeled serving, which may be smaller than your portion or the package. If a soup contains 480 milligrams per serving and you eat 2.5 servings, that meal provides 1,200 milligrams. For a sandwich, bowl, or prepared meal, include every component: bread, filling, cheese, sauce, seasoning, and side.
For adults and children age 4 or older, the FDA Daily Value for sodium is less than 2,300 milligrams per day. It is a general labeling reference, not an individualized prescription. As a label-reading guide, 5% Daily Value or less per serving is considered low and 20% or more is considered high. Front-label claims need context. “Low sodium” means 140 milligrams or less per serving. “Reduced sodium” means at least 25% less than the regular product; the reduced version could still contain a substantial amount. “Light in sodium” means at least 50% less than the regular version. “No salt added” or “unsalted” means salt was not added during processing, but the food may still contain sodium. Check the Nutrition Facts number after reading any claim. Your quickest sequence is serving size, sodium per serving, servings actually eaten, and then the total for the full meal.

Look for patterns, not one forbidden food
More than 70% of the sodium Americans consume comes from packaged, prepared, and restaurant foods rather than the salt shaker, according to FDA guidance. CDC identifies sandwiches, grain-based mixed dishes, soups, pizza, cured meats, breads, tortillas, snacks, condiments, and gravies among common contributors. Start with foods you buy or order repeatedly. Compare breads with breads, soups with soups, and sauces with sauces. At home, herbs, spices, garlic, citrus, vinegar, and salt-free seasoning blends can add flavor. Choosing fresh or unseasoned frozen foods more often, rinsing foods packed in brine, and using less sauce or dressing can reduce the total. At restaurants, check posted nutrition information when available and ask for sauces or dressings on the side.

It emphasizes vegetables, fruits, whole grains, fat-free or low-fat dairy, fish, poultry, beans, nuts, and vegetable oils while limiting sodium and foods high in saturated fat. Pair food awareness with accurate home readings
A home blood-pressure log can help you and your clinician examine patterns, but poor technique can create misleading results. AHA recommends an automatic upper-arm monitor with a cuff that fits your arm. Wrist and finger devices are less reliable. Bring your monitor to an appointment so a health professional can check your technique and compare it with office equipment.
Prepare consistently. AHA advises avoiding smoking, caffeinated drinks, and exercise for 30 minutes before measuring and emptying your bladder first. Rest quietly for at least five minutes. Sit with your back supported, feet flat, and legs uncrossed. Place the cuff on bare skin and support your arm so the cuff is at heart level. Do not talk or use your phone during the measurement. Take two readings one minute apart and record both. Follow your clinician’s instructions about timing and frequency. Record enough context to make the log interpretable: date, time, both readings, and relevant departures from your usual routine, such as recent caffeine, exercise, poor sleep, illness, or unusual stress. You may also note whether the measurement occurred around your usual medication time. The goal is not to explain every fluctuation yourself. It is to give your clinician a consistent record. Never stop or alter prescribed medication because of one reading or a dietary change.

Know when a reading needs professional help
For a reading above your usual range but below the emergency threshold, remain seated, check your technique, and repeat the measurement rather than drawing a conclusion from one result. Record both readings and contact your health care professional if readings remain concerning or repeatedly fall in a high category. A different boundary applies when blood pressure is higher than 180 systolic and/or higher than 120 diastolic. AHA advises waiting at least one minute and measuring again. If the repeat reading remains that high and you do not have concerning symptoms, contact a health care professional immediately.
Call 911 when a reading above 180 and/or 120 occurs with symptoms such as chest pain, shortness of breath, back pain, numbness, weakness, a change in vision, or difficulty speaking. Common questions
Is “reduced sodium” the same as “low sodium”?

Do I need to eliminate sodium completely?
